Dolce’s New Location is Sweet Dining

by Frank Mangio

About 5 years ago, old world Italian wines and cuisine came to Rancho Sante Fe with the romantic name( for Italian sweet bread and wine), Dolce Pane Y Vino.  Success was immediate, so fast forward to 2016 and the newest Dolce at the Highlands has come to Carmel Valley in the new Pacific Highlands Center .

Like its parent restaurant in the ranch, the new and vivacious Dolce treats its guests with an expansive dining room, and a bar that seems endless from the front door to the kitchen.  It has both community tables and tables for two or four, with views of very large and comprehensive wine racks, created by the GM for both locations, Steve Flowers. The wait help on my visit was Gwen Blome, who was quick to point out her favorite wines.  She was particularly excited by the showcase

Dolce at the Highlands is the new Italian style restaurant in Carmel Valley with delicious new Mediterranean style cuisine served up with gusto by table servers  like Gwen Blome.

Champagne chosen for the meal, the Nicolas Feuillatte Brut NV from France. The shimmering gold bubbly has an enticing fruity nose showing savory texture and refined bubbles. This is a lively dry Champagne for appetizers, or a long happy party. ($34.).

Other wine menu whites worth noting were the B Cellars White Blend 2012 and the Arneis “Barola Bianca” white from Piemonte Italy .

Chef Rhoelle Gabriel came to the table and spoke about her California influenced style of Mediterranean-American farm fresh food.   Her favorites included a “Regiatelle” pasta dish with Calabria style meat sauce, and a “Branzino” Italian style Sea Bass fish dinner entrée with potatoes and greens. This was washed down with a bottle of Napa Valley Laird Meritage “Jilian’s Blend” Red, 2013. ($44.)

The prized dish at Dolce at the Highlands is The “Branzino” Italian style Sea Bass.

Come prepared for a wine and dine experience at Dolce’s.  The atmosphere is perfect, with a wide choice of wines and menu entrees. Reservations are recommended at 858-847-2740, or visit dolcephr.com.

Quality Wine Dinners Excel at Vittorio’s
Back to back wine winners, world’s apart, have been on the marquee at Vittorio’s, also in Carmel Valley .  Last month, the popular Italian restaurant featured Chateau Montelena Napa Valley wines with  a five course dinner. Thursday May 26th at 6pm, one of the south of France ’s finest wineries, Gerard Bertrand, will open their best from the Languedoc District. The main course will live up to consistently great supporting menus Vittorio’s is known for:  Roasted Lamb Chops with Hazelnut Crust and Grilled Asparagus will be served with a 2013 Chateau de l’Hospitalet La Reserve Rouge. Cost will be just $49.50 per person.

A favorite at the Chateau Montelena dinner was the 2013 Cabernet Sauvignon, a luxurious vintage, rich in flavor. ($50.) RSVP Vittorio’s for the May 26th date at 858-538-5884.

The Napa - Verona Wine Connection

by Frank Mangio
When Estancia La Jolla Hotel and Spa owner Tim Busch recently introduced his Italian winemaking friend and partner Marchesi Armando Fumanelli at a recent gathering, wine history was being made.  For the first time in anyone’s memory, a California bottle of Amarone was available.  The Trinitas Napa Valley 2006 Amorone, also owned by Busch, made its debut at Estancia in a posh dinner featuring Fumanelli from Verona Italy, who has helped him develop this wine.

The evening was heightened when it was announced that this was going to be a “Parallel” tasting, the Old World versus the New World of Fumanelli and Trinitas wines for  each of the five course menus.

An alliance between the two men formed some 15 years ago, when Tim Busch sipped a glass of dark, full-bodied Amarone  in the ancient town of Verona, known more for Romeo and Juliet’s liaison. The wine’s unique character stayed with him until he had to make an American version to add to his Trinitas Family Collection of wines in 2011.  He set out to Italy and met Armando Fumanelli, whose family has been making wines since 1470.

Tim Busch of Trinitas Family Wines and Marchesi Armando Fumanelli of Fumanelli Wines.

The two shared their wines, introduced their families and that led to the unveiling of the 2006 Amarone from Trinitas.  “Very few people know about Amarone,” explained Busch.  I want to offer a unique old world wine experience.” Fumanelli is the Valpolicello District’s largest landowner, northeast of Verona in the Lessini Mountains.  The primary grapes are Corvina, Molinara and Rondinella.  The wines are concentrated, flavorful and complex.

Busch also had a blockbuster resort alliance announcement to make that night. His lifestyle company, Meritage Collection, now has four esteemed properties linked together for “a complete resort experience,” asserted Busch.  They are: Estancia La Jolla Hotel & Spa, Balboa Bay Resort Newport Beach, Bacara Resort & Spa Santa Barbara and The Meritage Resort & Spa Napa Valley.  An immediate benefit for guests of any of these properties will be VIP access to the Fumanelli estate with stays at the vineyard for wine tasting and cooking classes.

Like others of its class, Estancia has been undergoing extensive upgrading of its rooms and its Mustangs and Burros restaurant and bar, under the watchful eye of General Manager Terry Buchholz.  Its Rancho style décor remains the dominant look at the 210 guest room hotel with a world class spa in place.

The Executive Chef at Estancia La Jolla is Kimberly Kramer preparing
Southwest style plates motivated by the season.

Kimberly Kramer is always “searching for great flavor.” As Executive Chef at Estancia, Chef Kramer oversees the AAA Four-Diamond hotel’s kitchen.  She has steered the Mustangs and Burros restaurant into regional cuisine inspired by the season.  The special dinners, breakfast and lunch are at Adobe El Restaurante with fresh California fare. She has developed expertise in Asian and Latin influences.

“I’m passionate about seasonal foods, especially fresh seafood caught with sustainable practices,” she said. Most recently, she was at the Meritage Resort & Spa in Napa Valley, now one of the partner resorts for Estancia.

Her Sea Bass with mélange of mushroom, asparagus and roasted pepper was a delight to the senses.
Mustangs and Burros spotlights a Monday through Friday Happy Hour until 6pm, with discounted drinks and food.  Try the Trinitas family of wines led by the new Amarone 2006, and a knockout  2009 blend called “Mysterium” Mendocino Red. It’s Estancia’s family wine.  Learn more at www.estancialajolla.com

Mirth and Merriment at Dolce Pane E Vino

by Frank Mangio
Tucked away in a small shopping center in Rancho Santa Fe, Dolce Pane E Vino has this pixie-like atmosphere to it, to the point that I am always looking for Alice in Wonderland to sit next to me in the bar, ordering up one of those fabulous wines that are racked up throughout the wine bar and restaurant area.

Executive Chef John Weimann and General Manager Steve Flowers of Dolce Pane E Vino, a wine bar and small-bites restaurant in Rancho Santa Fe.

The room is at once cozy, beautiful and fascinating, with the charm of old-world Italy. Dolce Pane E Vino means sweet bread and wine in Italian and was created by Dr. Anthony Smith almost two years ago, but really hit its stride when Steve Flowers came in as General Manager, with his passion for world-class wine excellence. Details later, but I want to get into more of the “wow” architectural touches that blew me away.

A quick smile and a dose of merriment comes to all who snuggle into the family style tables that are crafted for sharing, and the lighting with Italian glass that drops down from the ceiling like so many fireflies.

OK, let’s get to what most customers come in for: spectacular cuisine and that specially selected, handcrafted wine that will keep you smiling.

Executive Chef John Weimann on selected menu creations: “my salad is a seared Hamachi fresh fish with arugula, orange and ginger vinaigrette mixed. On top, a sliced avocado with mixed citrus and fennel. Also fried shallot with Uzu Juice and house-made lemon oil.” Perfect.

GM Steve Flowers on the entrée: “ it’s a Wild King Salmon served on a cedar plank, wood fired in the open oven, garnished with sea salt and charred asparagus, drizzled with lemon and saba.” He went on about the wine selected…” a white Barola Bianca from Piedmont Italy, vintage 2009. It has crispy fruit that comes through the Italian style wine minerality.”

Two more reasons to get to know Dolce Pane E Vino. One is the imported artisan cheeses “to go” case, affectionately known as the “Formaggeria.” The 2nd is the exclusive membership Reserve 100. This wine program gives access to top-tier wines at great values from the top winemakers in the world. Every other month members will receive two bottles each of three ultra-fine wines with tasting notes, reviews and food-pairing ideas.

A typical recent trio of wines included: 2005 Col Solare Blend 94 points; 2007 O’Shaughnessy Howell Mountain Napa 95 points; and the 2007 Quintessa Rutherford Red Meritage 95 points. Make it into this wonderland of mirth and merriment by accessing www.dolcepaneevino.com or calling 858-832-1518.
